Turkey, turkey sandwiches, turkey pot pie, turkey salad, turkey gumbo…

I think I am as stuffed now as the turkey was. Although we ate Thanksgiving at some dear friends, my husband decided we needed to cook a turkey for the home front. So we did. Not because we love the bird that much, but because we love what you can do with the bird AFTER Thanksgiving. (See above) He loves to make his famous turkey salad – which only he loves – and I love to make turkey gumbo – which I love.

My two youngest sons favorite thing about this holiday is that they get to start putting up the Christmas decorations. We’re talking shades of the Griswalds here. But since work for one of them interfered this weekend, the only thing up when I got home from shopping yesterday was the wreath on the front door (minus the lights which will come later). Of course, they didn’t think to take down the Fall decorations yet.

This is the weekend they also give me their Christmas Lists. We have done this ever since they could write and I have kept them all. Almost every one of them starts with “Dear Santa, I have been good this year…” (Right! Santa wasn’t born yesterday!)

This year my youngest son did it on a powerpoint presentation. Ah, modern technology!

Our server was down yesterday almost ALL day long! Had blogging withdrawals!

Sad that today is Sunday and tomorrow work awaits. Where did the weekend go?

Turkey enchilada soup – yum!

Power point?!?! don’t let him near my kids – ARGH! 😯

We’re having turkey soup tonight and tossing what’s left. Enough with the turkey already! :yuck: Ah but it was good while it lasted.

I cleaned out the front room and it’s ready for the tree! Now I just gotta get it down from the attic… 😯

1 bag frozen corn
1 bag frozen carrots
1 can diced tomatoes
I onion diced small
1 32 oz box chicken stock
8 oz water
left over turkey (or chicken)
1 TBS ground cummin
1 tsp ground basil
salt/pepper to taste (at least a tsp or so)
several dashes Tabasco – your fave flavor
Cook till boiling (or you can simmer for several hours to get more flavor)
Add 1/2 to 1 cup minute rice – cover and cook for ten more minutes.
Can serve with tortilla chips or bisquits

Mik: I woke up this morning and the tree was up and half way trimmed! The boys did it last night while I was sleeping. Was kinda like little elves did all the work and I get to enjoy the fruits of their labor.
